Goat Nevat or simply Nevat cheese is produced in the Barcelona region of Spain. It is a soft-ripened cheese made by Mr. Joseph Cuixart. Pasteurised goat’s milk is used while making this cheese.Treated with a penicillium mold, this handmade cheese forms a bloomy white rind. The aging period is about 60-90 days and the completely matured cheese develops a soft delicate texture and sweet flavour.
